BBQ Tofu

This recipe is seriously great. Even people who normally don’t like tofu, like this. It’s a bit of a process, but well worth the effort.
Years ago there was a great vegetarian restaurant in Boulder that served this tofu. I was crazy about it, and the owner of the restaurant generously invited me into the kitchen...

A video for chicken tortilla soup

I think I just fell in love with our MAC. I tried out iMovie for the first time, and I actually was able to edit 3 video clips into one (and cut out 6 minutes of boring stuff!) The video still has my signature children running around and bad camera angles – but it’s way...

A yummy way to get lots of Veggies … Vegetable Soup!

I have so many things to catch you up on! First of all, I had a beautiful little girl on July 28th (Tess Elizabeth). She is precious and we are so in love with her.
I mentioned in the spring that we had joined a CSA for the first time (Community Shared Agriculture). I haven’t posted...

Seared Tuna (so easy, you won’t believe it)

Here’s a little trick: Whole foods has some amazing marinades and rubs, and they’re free.
Last night I made sesame-encrusted seared tuna (with wasabi), brown rice and sauteed broccolini. It’s not the cheapest meal in my repertoire, but it’s one of the best and it’s one of the easiest.
The cooking really begins when I can...

CPK Salad revisited

One of the first videos I ever filmed was for this salad. It was short, and you really never got to see what the salad looked like (mostly, I just talked about it).
So, I just did another video of the same salad, and this time the camera is focused on the food. You’ll even learn...

Chinese Chicken Salad

Everyone loves Chinese Chicken Salad. First of all, everything is chopped up into small, fork sized pieces for you (all of my favorite salads are chopped salads), and then you have the added bang of the crispy won-tons (or chow mein noodles in this case). Top that with a fresh-tasting sprinkle of cilantro and …...

Macaroni and cheese

Glorious, amazing, creamy macaroni and cheese. What could be better? Nothing comes to mind right this minute, so I’ll just have to stick with the mac & cheese. I love it with some protein – fried tofu or grilled chicken or steak and some Sriracha (rooster sauce) drizzled all over the top.
And on these nights,...

Pesto Pizza

Here’s my lunch plate yesterday:

I warmed up leftover pesto pizza and made a quick salad of greens my friend, Marshall Sanders, makes here locally.
Tuesday nights I work late. My amazing hubby handles the kids and makes dinner (and usually cleans the dishes up too … he’s my hero!) For my part, I usually try to...

Artichoke Chicken

This recipe came from my mother-in-law. You will see lots of recipes from her and her hubby (my father-in-law) because they are amazing cooks and top notch entertainers. I have learned so much from them, and our lives together have only just begun (in the scope of things).
You know how when there’s a bowl of...

Mini chipotle-spiced turkey meatloaves

As I sit here, at my desk, eating one of these little meatloves right now, I thought I’d share the recipe.
My thoughts are this: These things are super spicy! I love them that way, but if you don’t like spicy food, cut the chipotle pepper down to one, as well as reduce the chipotle sauce...
